Half Pig

What comes packaged in a half pig you ask...lots depends on the size and weight of the pig when it is processed.  This is approximate.

1 Ham 15ish pounds - either whole or cut in half and smoked or fresh (can also do ham steaks if you wish)

2-3 packs of chops - 2 chops (boneless or bone-in) per pack and smoked or fresh

4-5 packs of bacon - smoked or fresh approx 1#/pack

1 pack of spare ribs

1 pack of babyback ribs - (ONLY if you chose boneless chops)

6-8 packs of sausage - Can choose Italian sweet/spicy or breakfast

1 hock - usually smoked - great for baked beans or ham bone soup!

1 pack of neck bones - if you like

4-6 pounds of fat/lard - if you like
